Why we bake the hard way

Since 1994, our family has crafted authentic Mexican pastries using traditional recipes and techniques passed down through three generations. Every morning we start before dawn so customers get the freshest pan dulce in town.

We refuse to take shortcuts or cut costs — high quality pan dulce with fresh ingredients and no preservatives. From tres leches cakes to crispy churros, each item is made with love and time-honored methods.

Two bakeries, one family

Today you can find us at two locations in the heart of Orange County: our original Santa Ana bakery and our Anaheim bakery, both open every day with over 85 varieties of fresh bread.

A short timeline

  1. 1994 — The family opens Tlaxcala Bakery in Santa Ana, baking pan dulce the way it was taught at home.
  2. Years of mornings — Before-dawn mixes, full cases by open, and a reputation for bread that still tastes like the oven.
  3. Second home in Anaheim — A second bakery on Lincoln Ave so more of Orange County can walk in for the same fresh bake.
  4. Today — Still family-run, still no preservatives, still over 85 varieties rotating through the cases — plus custom cakes for the celebrations that bring everyone together.
